Vegan Comfort Food
You know you're a tree-lovin' hippie when your idea of comfort food is not mashed potatoes with loads of gravy but quinoa with stir-fried greens and garlic, some tamari roasted chickpeas and miso tahini sauce. Now that's good stuff! I finally got around to making the chickpeas from Eat, Drink and Be Vegan and they certainly did not disappoint! Today I discovered they are awesome on salad too!
Yesterday, I made the nearly-instant Thai coconut corn soup from Vegan Express. To be honest, I thought it was just okay until I had a bowl for breakfast this morning. I think by today, the flavors had really meshed together and it was simply delicious!

I've heard such good things about roasted Chickpeas, but I haven't tried them out yet! I will have to do so soon. All looks yummy! You have to try the chili lime tofu from VeganYumYum! It seriously rocks. Carnivorous hubby asked for SECONDS.
quinoa, greens, garlic & chick peas sound like the most heavenly combination, and one i'll have to try! it all looks so delicious!
Tamari chickpeas sound perfect to me! And while I do like mashed potatoes, I prefer spicy, more Mexican oriented food as my comfort food. That our some spicy Asian meal.
I really need to get that cookbook, seriously, those chickpeas look fantastic.
mmm, I don't know... I just ate mashed potatoes for dinner as a comfort food! It depends on the mood, I guess, sometime I have other healthier comfort meals...
I'll have to try to roast chick peas when it stops being horribly hot!
I thought that soup was very good but I also thought it needed more spice. Next time I'll add a bunch more curry paste. Otherwise, I loved the taste!
You should start a local vegan cooking show!
That's so funny about the comfort foods--I'm the same way! Give me chickpeas or brown rice any day over mashed potatoes and gravy.
I love roasted chickpeas. The perfect snack food. I should really try them with quinoa and greens though. It sounds heavenly. Guess that makes me a hippie too...
